What's Cooking?

Hi lovelies,
ITts hump day over in these here parts of the world and I couldn't be happier.
This week has seemed super long and tiring. Two more days until the weekend, whoppee! I'm looking forward to lounging on my couch and just relaxing.

My journey to get back on track with my fitness and health has been  challenging. I've been having back pains from running, so have to quit that. I'm also battling a sinus infection that seems to be ongoing for  over a month now. It' s a wonder I can go to work these days. Actually missed a day last week because I was in such a bad state. Oh well, the back pain is gone thank God. Now just have to get back in the gym on a regular basis.

I am proud to say that my eating is getting back on track. I've been cooking and getting creative in the kitchen.
Definitely trying to live a full Paleo lifestyle. Hopefully my sinus problems with go away and the pounds will take a hike once my body gets back into Paleo mode.

Here are just a couple meals I threw together this week. They were super yummy and healthy.

Life Lately




Hello lovelies, 
Hope you're having a wonderful week. 

 I'm back on my paleo game and going hard! I've been cooking and baking up a storm these past few weeks.
This was my dinner last night. Baked chicken, broccoli and the best sweet potato hash ever.
I was really in the mood for some potatoes like the kind I used to get at a little deli in NYC ages ago. They were oniony and yummy. I had these white sweet potatoes and I decided to use them to experiment. I am so happy I did because they turned out amazing.

Here is what I did.

Cut up 1 medium potato. Heat frying pan with 1 tbsp ghee until the ghee is really hot. Add the potatoes and cover the pan, stirring every 5 minutes. Add a tbsp of water if potatoes get dry. When they are nice and crisp and the color has turned a lovely golden brown, add half a white onion and green pepper that you've chopped up. Keep adding a few tsps of water until everything is cooked. Onions should be translucent. Seasoned with salt and pepper and whatever other seasoning you like. I used a garlic and sea salt mixture. This will be a hit with everyone and the best part is that it is paleo and healthy.

On to some other news, I am so sad that I'm going to have to quit the couch to 5k running program I recently started. I am suffering from near crippling lower back pain after running despite warming up and stretching. I have been going to the gym for ages and I've done tons of exercises but it's only after  running that I'm having these pains. I was really enjoying running too. Such a bummer. I'm going to the doctor with the hope that they can tell me something. I'm not sure what the problem is. Fingers crossed for me.

Pumpkin Banana Chocolate Muffins



Hi lovelies, I have been seeing so many pumpkin recipes floating around the web over the past few weeks that I became obsessed with the idea of baking some kind of pumpkin thing. Preferably paleo approved.
I got my hands on a large can of pumpkin and pretty much baked for 4 days. Talk about pumpkin overload.
Anyway these little muffins were my best work. I had followed a bunch of recipes to make the other pumpkin things but these were sort of my little experiment.
I quite enjoyed them and my friend Jen said they were delish.

Figured it would be nice to share with you guys.
Hope you enjoy!

Recipe: 
2 eggs
1/4 cup coconut flour 
1/4 cup almond flour
 1/2 cup puréed pumpkin 
1/2 tbsp organic vanilla 
3 tbsp melted butter (grass fed) 
2 tbsp organic cacao powder 
2 ripe bananas 
1 tbsp pumpkin spice mix (you can make your own) 
1/2 tsp baking soda 
1/2 tsp baking powder 
1/2 tsp sea salt 
4 madjool dates
 2 tbsp honey/ stevia (optional) 
Directions: In a food processor, combine eggs, melted butter,pumpkin, vanilla, dates (microwaved for 1 minute in 1 tbsp water then mashed),honey, bananas and blend until combined. Mix all dry ingredients i.e flours, cocoa powder and spices together. Add them to the wet ingredients and blend. The batter will be a little thick but it's ok. Scoop into muffin tin (I use muffin liners cause it's so much easier), bake for 40 minutes. Allow these babies to cool and enjoy. Try not to eat them all at once.

Lustworthy: Accessories Edition


Hi Lovelies,
My favorite store is having an extra 40 off sale. Sadly I am too far away to fully partake in it but I still enjoy checking out the goodies. 
Here are just a few of the wonderful things they are practically giving away. 
If I were back in the Americas, I would be all over this sale. 
Truth be told, I did snap up those sneakers; they'll be waiting for me when I get home in the summer. I also got the bag as a gift for my mom for Christmas. I have the black version and she loved it, so when I saw this for 80 bucks I had to get it for her. 

Seriously guys get over there and check out the sale. It may be ending soon and it would be a shame to miss out. They have great swimsuits for less than 30 bucks. 


These earrings are so pretty! I don't know if I could pull them off but for the price of 23 dollars I would buy them just to try.

This is one of the he best totes to have, especially when traveling. It' s super light weight.You can fit so much junk in it and it won't break your back. |It also comes with a little flat purse. I stored my metro-card in it for easy reach when I was home in NY. So convenient.

Cute flats are always a plus in any closet. It's an easy way to add pizzazz to a neutral outfit palette. I see these with all black or denim on denim. If you're really bold you can mix it with stripes and denim. Loads of choices.

December Travel Plans Revealed


I have insane wanderlust. I want to go everywhere and see everything!

This insatiable desire to see the world was my sole reason for moving to Abu Dhabi. I figured it would give me the opportunity to travel to places that at one point seemed  completely beyond the scope of my existence.

I am so happy to say that God has truly blessed me and I have managed to cross off a few countries on my extensive travel bucket list. By no means am I close to my goal but if I can honestly say that I am pleased with the progress I have made so far.

Since I am not rich with copious amounts of cash at my disposal, I have to think very carefully about the trips I take.
For my trip in December I also have to take into consideration the climate and weather. I cannot/refuse to go somewhere that snows or is uber cold. I am not about that frozen life.
That pretty much rules out most of Europe.

With my budget and weather restrictions, Asia comes out as the winner.
Very budget friendly and warm weather to meet all my needs.

My choice this year is... drum roll please




This will be my first solo international trip, yikes!!!!!
One of my 2014 goals was to take a trip sans travel buddy. I am a mixed bag of emotions. Excited, nervous, scared and everything in between.

I have heard/read many things about Vietnam. Some people loved it and some hated it. I guess that's how it is with most countries right?
I am praying that I have an amazing experience there.
There is no going back now, tickets, hotels and tours have been booked and paid. I am in the process of finalizing my itinerary. There is so much to see and do and I am trying not to get carried away. I want to leave room for days of rest and relaxation.

Counting down the days already. Can't wait to share my experiences with you.
If you've ever been, please share  tips and  recommendations for good places to eat.

Life Lately



Hi lovelies,
How you doing? (Wendy Williams voice).
Goodness, I haven't posted in what feels like forever.
I wish that I could tell you that I have been super busy and productive accomplishing my life goals which kept me from blogging.
Truth is I was sick for a bit and during my bout of illness I was laid up on my couch at which time I discovered the tv show White Collar. I became ridiculously enamored with this show and spent the past few weeks watching every single episode. Sadly I neglected many things including my dear blog.

Thankfully the show ended becasue I am convinced that I would have become a laid-out on the couch, tv watching, chips eating recluse. Well maybe not completely since I still had to go to work.

Anyway, so here I am back to the real world.
It's Eid (Islamic holiday) here and we got a few days off from work.
I wanted to get out of town but we only got two days off and it wasn't enough time for me to justify spending a lot of money to go somewhere far and exotic.
Luckily my friend who was having the same dilemma suggested we drive to Oman to visit his friend who had just moved there.

We literally threw a bunch of stuff in our bags, hopped in my car and off to Muscat we were.

Even though we were only there for a couple nights, I had a great time. Loads of laughing and a beach barbecue made the trip so much fun.
Thank God for these little opportunities to enjoy life.
